The first type, characterized by vomiting, is caused by an emetic toxin, while the second type, associated with diarrhea, is due to various enterotoxins produced by the bacterium.
Bacillus cereus can contaminate a wide range of foods, including rice, pasta, sauces, meat, vegetables, and dairy products. Improper cooking, inadequate storage, and insufficient refrigeration can result in the survival and subsequent growth of this bacterium, increasing the risk of foodborne illness.
